After your syrup is done, remove it from the heat and let it cool. Strain out the pieces of ginger and the peel. When it is room temperature, it can be stored in a bottle or airtight container in the refrigerator for up to two weeks. When you’re ready for ginger ale, pour 1/4 cup or so of ginger ale over ice. Add one cup of club soda on top.
