Vegan Muffin Breakfast!

Becoming vegan has never been this easy, or delicious! This amazing recipe will make anyone want to become, or at least give an opportunity, to this amazing lifestyle! Enjoy your vegan muffin breakfast!
Raspberries, just like any other berries are packed with antioxidants your body needs and they are also a natural energy booster that will make you feel full of energy all day long, and the white chocolate gives the perfect amount of sweet to make it delicious, yet very healthy!
That’s why this recipe is perfect as a breakfast meal it makes up to 6 medium muffins, so it is perfect for you and your family!

Raspberry and White Chocolate Muffins

2 cups plain flour
1/2 cup caster sugar
2 teaspoons baking powder
1/4 teaspoon sea salt
1 cup almond milk or rice milk
1/4 cup melted vegan margarine
1 heaped teaspoon corn flour
1 teaspoon vanilla extract
1 cup vegan white choc chips
1 cup fresh or frozen raspberries (or any berry you like!)

Begin by preheating the oven to 200°C. Then mix the flour, baking powder, sugar and salt, add the milk, margarine, corn flour and vanilla extract and stir. Finally pour the berries and chocolate chips. Place the mixture in a muffin pan and bake for 25 minutes. Enjoy!
