Red Lentil Stew with Beets for a healthy heart!

All you need is:

1 cup of dried red lentils
½ cup of quinoa
½ medium shredded beetroot
1-inch piece of chopped ginger
¼ cup of diced red onion
1 bay leaf
4 cups of water
1 Tablespoon of coconut oil
½ teaspoon cumin seeds or flaxseeds
1 teaspoon turmeric powder
Fresh lime wedge, black pepper and sea salt to season

The preparation won’t take much effort, first place the lentils, quinoa, shredded beet, ginger, onion, and bay leaf in a pot of boiling water and simmer for 30 minutes. Meanwhile, heat coconut oil and sauté cumin seeds and turmeric for a couple of minutes on medium heat and add it, and add both the oil and mixture to the lentil stew and mix. Squeeze the lime, season as desired and enjoy a delicious bowl of health!
