Quick and Easy Skillet Dinner (Chicken Parmesan Baked Pasta)

Ok, so this might not be the healthiest meal on our website but it is a perfect comfort food that will keep you far away from fast food or other options that are more unhealthy, so why not? It is absolutely delicious! All good things in moderation!

All you need is:

28 ounces fresh chopped tomatoes (5 or 6)
1 Tablespoon olive oil
6 minced garlic cloves
1/4 teaspoon dried oregano
1/8 teaspoon crushed red pepper flakes
1/4 teaspoon kosher salt
2 cups water
1 cup low-sodium chicken broth
12 ounces whole-grain pasta
1 cup of grated Parmesan cheese
1 cup shredded mozzarella cheese
1/4 teaspoon ground black pepper
1 pound boneless, skinless chicken breast cut into bite-size pieces
2 Tablespoons chopped fresh basil

Quick and easys killed dinner 1

Preheat the oven to 475 F and set an oven-safe 12-inch skillet over medium-high heat, add oil, garlic, oregano, red pepper flakes, add salt and cook just until fragrant, about 1 minute, add chopped tomatoes, water, 1 cup of the chicken broth, and the pasta. Stir until it combines, reduce the heat and continue simmering until the pasta is tender, about 16-18 minutes. Sprinkle the top evenly with the mozzarella cheese and the remaining Parmesan cheese. Transfer the pan to the oven and bake until the cheese has melted and sprinkle the top with basil, ENJOY!
